The Best Foods for a Gym Diet Are the Ones Your Body Can Actually Absorb

The meal in front of you after a workout is probably well planned. It has protein, greens, some carbs and fewer calories than yesterday. What most macro trackers don't show you is how much of that plate your body is able to absorb and use. Absorption doesn't get much attention in gym culture, but it decides whether the nutrition you're tracking actually reaches you.

Protein Gets the Attention. Absorption Does the Work.

Most gym diets in India are built around protein: paneer, eggs, chicken, dal, whey. That makes sense, because protein is essential for building muscle. Protein doesn't need fat to be absorbed. Several of the micronutrients your body relies on during training do.

Vitamins A, D, E and K are fat soluble.

They dissolve in fat, not water, and your body absorbs them along with the fat in a meal. If a meal has very little fat, you absorb less of them.

The Salad Problem

A Leafy greens, methi, cabbage Purdue University study found that eating salad with a fat free dressing led to significantly lower absorption of carotenoids (the plant compounds behind the orange and red colours in vegetables, which your body turns into vitamin A). Adding fat improved absorption. In practice, a plain boiled vegetable bowl eaten for "clean" reasons may give you less vitamin A, E and K than the same bowl with a small amount of fat on it.

How to Build a Gym Plate Your Body Can Use

  1. Add a small amount of fat to every vegetable. A teaspoon of fat on cooked greens, a tadka on dal, or a few nuts in your salad all help absorption. You don't need a lot. 
  2.  Combine turmeric with fat and black pepper. Curcumin, the main compound in turmeric, is fat soluble. Black pepper also helps your body absorb it. This is why a classic tadka (fat, then haldi, then a pinch of pepper) works well.
  3.  Time your fat around training. Fat slows digestion. A heavy, fatty meal just before a workout can make you feel sluggish. Keep pre workout meals lighter and put most of your fat into your post workout and later meals.
  4.  Eat colourful food. Carrots, pumpkin, spinach, beetroot and tomatoes are rich in nutrients that absorb better with fat, so put them on the plate along with the fat.
  5.  Count your fat, don't remove it. Fat has 9 calories per gram. One teaspoon of ghee (about 5 g) has around 45 calories. If you're cutting, measure your fat and include it in your plan rather than leaving it out completely.

It has a strong flavour. A small amount goes a long way, which helps you control portions.
